THE GRANDPARENT’S PANTRY
We are in Scala, the oldest village on the Amalfi Coast. Alfonso and Immolata, open the doors of their house characterized by large land cultivated with vegetable garden overlooking a beautiful view of the gulf. We are here to learn how to make preserves, a peasant tradition that has been handed down for generations that teaches how to make large seasonal harvests precious jars of pickles.
Living well, wasting less and respecting the environment, this is the motto of the simple rural communities that with sacrifice, passion and respect for the land transform raw materials into preserves throughout the winter. Chestnuts, mushrooms, tomatoes, almonds, onions, pumpkin, olives, a range of genuine food of local production that will first be cut, processed, cooked in vinegar, placed in oil and then left to rest for months.
